Fit-out of a Sri Lankan restaurant & bar, Lankan Filling Station, based in inner Sydney. Steel shelves filled with colourful spice jars, polished concrete, copper lighting, dark timber and leather seating with a busy open kitchen at one end and a high bar at the other. A long, narrow space makes for a bustling atmosphere where the sambols, hoppers and curries fly out of the kitchen from lunch until late.

The client’s brief required an open kitchen with seating, a bar area with seating, and a specific number of diners in a long, narrow space.

The client’s brief was challenging because of the area we had to work with to achieve all items required. Throughout the design process we had concerns about fitting in enough seats without the space feeling over crowded.

Clever planning of the small space resulted in an intimate, bustling restaurant with closely seated patrons, good acoustic control which significantly reduces noise levels, and an efficient team of staff who weave and manoeuvre between tables, chairs and bar-stools.

The client is one of Sydney’s top chefs who has worked at excellent restaurants in the Sydney food scene. She had been looking for the right space to open her own restaurant and a great relationship forged between us the architects, and she, the chef/client.

How is the project unique?
The restaurant fit out was done when the 6 storey building we designed was near completion. It is an extension of the overall building and the design encapsulates this. The building was originally a two storey terrace and we inserted 6 storeys with the restaurant at ground level. The lobby for the commercial levels was designed to work with the restaurant so patrons could spill into this area at night once the commercial levels closed down for the day.

A custom made light box serves as an art piece for the lobby during the day and by night, a warm glow of light spills into the restaurant space.

Elements from the original terrace have been kept throughout including the rough brick wall surface and the jagged roof form. Fine steel elements used in the commercial levels have also been designed throughout the restaurant for a variety of purposes such as spice and pickle jar holders, wine shelves, and nooks for staff to house payment stations and POS systems.

The key products used are custom steel joinery, concrete, leather, dark timber, custom copper lighting, fabric from Sri Lanka, existing brick.
