The recently opened Le Central food hall reunites 25 local gastronomic icons, and has become a must-see in the creative and diverse city of Montreal. Heirloom pizzeria fits perfectly into this gourmet mix with its Neapolitan pizzas and natural wines.

Heirloom is a welcoming space with its rounded corners and warm textures. From the vantage point behind the white oak bar, one can appreciate the action around the imposing Italian Malagutti oven covered with a penny round red mosaic tile. A huge light-box menu recalls the banners once sitting in the vanishing red light district of Montreal and is a beacon for pizza lovers.

This rounded light-box steps down to a steel framed glass wall, giving volume and depth to the kiosk. A long steel shelf supporting over a hundred pizza boxes is suspended along the length of the kiosk to handle the large number of take away orders.

Constrained by having to integrate all the equipment into such a limited space, every inch had to be thought out to maximize efficiency for fast-paced lunch and dinner rushes. A custom designed wine cellar made from hot rolled steel and glass houses the carefully curated selection of natural wines. Unlike the often imperfect and bulging tomato from which this restaurant gets its namesake, heirloom is a classic jewel, polished and refined and will certainly age with grace. Buon appetito!

Situé en plein cœur du quartier des spectacles et réunissant 25 icones de la gastronomie montréalaise, Le Central s’impose comme un incontournable de la créativité et diversité de la ville. La pizzéria heirloom s’inscrit à merveille dans cette halle gourmande avec ses pizzas napolitaines et ses vin natures.

Il suffit de s’installer au bar de chêne blanc pour pouvoir apprécier l’action se déroulant autour de l’imposant four à bois recouvert de mosaïque de porcelaine rouge vif.

Avec ses formes arrondies et ses textures chaleureuses, Heirloom se veut accueillant et convivial. Un énorme menu lumineux rappelle les enseignes trônant autrefois dans le disparu red light district Montréalais et permet ainsi à heirloom d’être aperçu de loin par les passionnés de pizza. Des panneaux de verre encadrés de cadre d’acier suivent cette enseigne, créant un effet d’escalier et donne volume et profondeur au kiosque.

Prévoyant un volume important de commandes pour emporter, un support d’acier a été pensé pour recevoir plus d’une centaine de boîtes de pizza.

Travaillant dans un espace restreint, tout a du être réfléchi pour permettre à la ligne de production de se dérouler sans faille, en y intégrant tout l’équipement nécessaire aux opérations, incluant notamment un étroit cellier fabriqué sur mesure.

Contrairement à son homologue végétal souvent biscornue, imparfait et fissuré, heirloom est un bijou classique, poli et raffiné et vieillira certainement en beauté, Buon appetito !
